Meet Guillaume – the new Head Chef at Pet Sounds Bar!

INTERVIEW WITH GUILLAUME DEPLANCK

Pet Sounds Bar is the legendary wine, food, and vinyl bar that was reborn in A house Katarinahuset in 2024. They recently hired a new Head Chef – Guillaume Deplanck – whom we had the pleasure of meeting to chat about food and how he has put his own stamp on the menu.

Hi! Can you tell us a little about your background – how did your journey as a chef begin?
– My French father dreamed of becoming a chef, but life took him in another direction. When he suggested that I pursue a career as a chef, I chose to follow that path. That led me to start at the Paul Bocuse school in Lyon.

What attracted you to start working at Pet Sounds Bar?
– I became interested in the position because I knew that I would have free rein to develop the menus. Music is also an important part of this place, and since I myself have a great interest in music, it felt like a perfect match!

What flavors or techniques inspire you right now?
– I put a lot of time and passion into flavors and don’t like shortcuts. Good food simply has to take the time it needs. As long as we in the kitchen taste everything and stand behind what we do, we can also serve what we ourselves feel inspired by.

If you could only eat one dish for the rest of your life – what would it be?
– Moroccan lamb tagine! It combines salty and sweet, and has a fantastic variation in both taste and texture.


What food trend are you most tired of?

– Non-alcoholic drinks with food – I don’t think anything can replace a good wine with food. Then you do as you please, of course. But I’m not that sensitive to trends!

What do you like to do when you’re not cooking?
– When I’m not cooking, I like to bake. I also sing a lot, which helps me relieve stress. In addition to that, I play badminton and meet friends. That’s it!
